What are the Slow Food Presidia in Calabria?
What is a "Slow Food Presidium" and how can you recognise it? The Slow Food Foundation was established in Florence in 2003 with the aim of protecting and promoting the agri-food biodiversity of Italian products. There are currently 14 Slow Food Presidia in Calabria, reflecting the best practices of a local supply chain that makes provenance a national excellence. As with all products covered by the regulations, the Slow Food Calabria Presidium is also subject to common selection rules and guidelines, which guarantee a model of agriculture based on local biodiversity, respect for the land and tradition. Agriculture in balance with the environment and the people who practise it, resulting in food that is "good" in every sense!

A land of ancient agricultural and pastoral traditions, Calabria offers both fresh and aged or dried products bearing the Slow Food label. Each province has its own specialities, ranging from cheeses to citrus fruits, wine to meat, and legumes and vegetables used in fragrant hot and cold soups. Every season of the year has its own Slow Food Calabria Presidium, so just follow your taste buds to try them. We recommend an immersive experience in farmhouses, educational farms and Calabrian dairies, which offer tastings, guided tours and delicious workshops.
The ideal lunch based on Calabria's Slow Food Presidia? Start with a rich Calabrian platter of cold cuts (Gammune of Belmonte, Capocollo Grecanico) and cheeses (Caprino d'Aspromonte, Caciocavallo di Ciminà and Pecorino del Monte Poro); followed by a delicious steaming vegetable soup (a bean soup made with Poverello Bianco di Mormanno and Cortale beans); for the main course, an unmissable grilled Podolica Silana served with a salad of Pomodorini Siccagni di Zagarise. To finish, a dessert of crunchy Piparèlle, typical biscuits from Villa San Giovanni, and a basket of fruit (Biondo Tardivo from Trebisacce, Prùna di Frati from Gioia Tauro Plain and Arance S.
