Traditional Calabrian cuisine returns to the spotlight in Lamezia Terme with the "U Risu d'Azata" competition, an event dedicated to promoting one of the most representative dishes of the typical Lamezia menu, deeply linked to the carnival tradition and historically prepared on Shrove Tuesday.
The initiative, inspired by the original recipe of master chef Rosetta Ruberto of the Academy of Calabrian Folk Traditions, is part of a programme to protect and promote the local gastronomic heritage, recognising cuisine as an authentic means of recounting the territory, its history and its identity.
The competition will take place on Tuesday 17 February 2026 at the 'Luigi Einaudi' Technical and Vocational School in Lamezia Terme, on the occasion of the 2nd World Day of Risu d'Azata, and will involve third, fourth and fifth year culinary arts students.
Designed as an opportunity for educational and professional growth, the event aims to preserve and pass on ancient culinary knowledge to new generations, stimulating awareness, skills and respect for a gastronomic tradition that continues to live on through shared gestures, ingredients and rituals.
