The Ciminà Caciocavallo festival, now in its nineteenth edition, is the central event of the Ciminà summer. It was created with the aim of making known the product par excellence of the area, the Caciocavallo, elaborated by generations of craftsmen with ancient techniques handed down since the mists of time, but expertly adapted to modern quality standards. The goodness of Caciocavallo di Ciminà is also to be found in the environmental context in which it is born: the uncontaminated nature of the area enfolded at the foot of Mount Tre Pizzi, the crystalline water of the many springs and the expanses of fragrant grass intended for grazing, the real secret of the particular taste of the product. It is precisely the peculiarity and variety of the Ciminese pastures that give Caciocavallo its characteristic flavour, excellent when fresh, deep and complex when aged. The Caciocavallo festival is the right opportunity to get to know it in all its variations, in combination with many other delicacies of the local gastronomy, which with its ancient flavors will transport anyone on a journey through time, in a past marked by the rhythm of nature . It is also necessary to remember that the Caciocavallo di Ciminà is recognized as a traditional agri-food product by the Calabria region, it is a de.c.o. and slow food presidium.
